It’s like fondue meets sweet potato
Thinly slice one large sweet potato and finely grate Gruyere cheese (1/2 cup).
Place a layer of the sweet potato into the bottom of your pan (I’m using a pie pan). Lightly salt and pepper the layer. Top with 1/4 c grated cheese (feel free to use more).
Pour 1/4 cup white wine over the seasoned sweet potato-gruyere cheese layer. Then repeat another layer: potato, cheese, wine, salt, pepper.
Cover with foil, bake 1 hr at 350-degrees Fahrenheit. Uncover and bake another 15 min, until wine remaining in the pan is reduced or cooked off.
