When you have a surplus of sweet potatoes, make fries! Dip them in a harissa based sauce for added zing!
To make the sauce for the fries, I added equal parts mayo and harissa, stirred it up, and YUM! Sour cream and harissa works, too.
I used a bon appetit recipe to make the harissa but modified it a bit. I added 3 roasted red peppers, substituted 1 1/2 teaspoons red pepper flake for the chile de arbol, and I skipped the olive oil. To be honest, it tastes a lot like the base for my enchilada sauce when I use dried guajillo and ancho peppers. DELICIOUS but I think I’m going to play around by using ONLY roasted red pepper and a lot more red pepper flake.
