An elegant accompaniment to almost any meal is toast with garlic and tomato. If this year you have committed to simplicity, add this to your kitchen options.

It is so simple to make: toast your bread, peel and cut a clove of garlic in half, and cut a wedge of tomato. Rub the toasted surface of the bread with the cut side of the garlic, then rub the toast with the tomato wedge. You can also grate the tomato onto the bread. Finishing with a sprinkle of salt is optional.

A great way to enjoy black-eye peas left over from New Year’s Day is with a side of toast rubbed with garlic and tomato. It’s a side that is warm (the toast), crunchy (again, toast), savory (the garlic), and fresh with light sweetness (the tomato). In one bite you can taste everything that’s there.
